🔸 For the Rice
• A half-cup of basmati rice that has been soaked
• 6–7 cups water
• One inch cinnamon stick, two green cardamoms, four cloves, and one bay leaf
• Salt to taste
🔸 For the Vegetable Masala
• 1/4 cup oil or ghee
• 1 large onion, thinly sliced
• 1 tbsp ginger-garlic paste
• 2 medium tomatoes, chopped
• 1/4 cup plain yogurt (whisked)
• 1/2 cup carrots, diced
• 1/2 cup green beans, chopped
• 1/2 cup green peas
• 1/2 cup potatoes, diced
• 1/2 tsp turmeric powder
• 1 tsp red chili powder
• 1 tsp coriander powder
• 1/2 tsp garam masala
• Salt to taste

• A few strands of saffron soaked in two tablespoons of warm milk
• 2 tbsp chopped mint leaves
• 2 tbsp chopped coriander leaves
• 1/4 cup fried onions (birista)
• 1 tbsp ghee (for drizzling)
👨🍳 How to Make Veg Biryani—Step-by-Step
Step 1: Cook the Rice
• Add salt and entire spices to boiling water.
• Add soaked rice and cook until 80% done (rice should have a bite).
• Drain and set aside.
Step 2: Prepare the Vegetable Masala
• In a deep khari, heat the oil or ghee.
• Saute the onions until they get golden brown.
• Add ginger-garlic paste, sauté 1 min.
• Add tomatoes and cook till soft.
• Stir in all powdered spices.
• Cook until the oil starts to separate from the yogurt.
• Add chopped vegetables, cook covered for 8–10 mins or until tender.
• Adjust salt and spice.
Step 3: Layer the Biryani
• In a biryani handi or heavy-bottom pot:
1. Cover with vegetable masala.
2. Cover with rice.
3. Add ghee, fried onions, saffron milk, mint, and coriander.
4. Continue until all of the rice and masala have been utilized, then finish with more rice.
Step 4: Dum (Steam Cooking)
• Cover with a tight lid or seal with dough.
• Cook Maximum 15 to 20 minutes.
• Alternatively, place a tawa under the pot to prevent burning.
