Samosa chaat is a popular street food that transforms leftover samosas into a chaat masterpiece. This recipe hits all the right notes: crunchy samosa, cool and creamy yogurt, tangy tamarind chutney, spicy green chutney, and soft spiced chickpeas.

Ingredients of Samosa Chaat:
For the Chaat Base:
❖ 4 medium samosas (store-bought or homemade)
❖ 1 cup cooked chickpeas (boiled or canned)
❖ 1 medium onion, finely chopped
❖ 1 medium tomato, chopped
❖ 1 small boiled potato, diced (optional)
❖ 1/2 cup thick yogurt (whisked)
❖ 2 tbsp chopped fresh coriander
❖ 2–3 tbsp nylon Sev (optional, for crunch)
❖ 1–2 tbsp pomegranate seeds (optional, for sweetness)
For Chutneys:
❖ Tamarind chutney—3 tbsp (store-bought or homemade)
❖ Green chutney – 2 tbsp (mint-coriander)
❖ Chutney of red garlic—1 tbsp (optional for heat)
Seasoning:
❖ 1/2 tsp chaat masala
❖ 1/2 tsp roasted cumin powder
❖ 1/2 tsp red chili powder or Kashmiri chili
❖ Salt to taste
❖ Juice of 1/2 lemon
Step 1: Get the chickpeas ready
1. Rinse and drain the canned chickpeas.
2. Add chickpeas, 1/4 tsp salt, 1/2 tsp chaat masala, and cumin powder to a skillet with 1 tsp heated oil.
3. Cook until tender and lightly seasoned, 3 to 5 minutes over medium heat. Allow it to cool.
Step 2: Get the toppings ready
1. For a well-balanced flavor, whisk yogurt with a small amount of sugar and a touch of salt.
2. Chop the tomatoes, onions, coriander leaves, and boiled potatoes finely.
Step 3: Put the Chaat Together
1. Place 1 samosa on a serving plate and crush it slightly (don’t mash completely).
2. Include chopped onions, tomatoes, a few potato cubes, and a teaspoon of chickpeas.
3. Drizzle 2–3 tbsp yogurt generously over the mixture.
4. Add tamarind chutney, green chutney, and red garlic chutney as desired.
5. Add lemon juice, chili powder, cumin powder, and chaat masala.
6. Sprinkle fresh coriander, pomegranate, and sev on top.
Step 4: Serve Immediately
