Ingredients of Panjeeri:
Base Ingredients:
🔹 2 cups whole wheat flour (atta)
🔹 1/2 cup semolina (suji)
🔹 3/4 to 1 cup desi ghee (clarified butter)
Dry Fruits & Nuts:
🔹 1/2 cup almonds (chopped or crushed)
🔹 1/2 cup walnuts (crushed)
🔹 1/4 cup pistachios (optional)
🔹 1/4 cup melon seeds (char magaz) or sunflower seeds
🔹 2 tbsp dry coconut flakes (or grated fresh, lightly roasted)
🔹 2 tbsp edible gum (gondh), crushed (optional but great for strength)
🔹 2 tbsp poppy seeds (khus khus) (optional)
Spices & Sweetener:
🔹 1/2 tsp cardamom powder
🔹 3/4 to 1 cup powdered sugar (or more, depending on flavor)
🔹 A pinch of nutmeg powder (jaifal) (optional)
Step-by-Step Instructions:
Step 1: Roast the Edible Gum (If using)
🔹 Heat 2–3 tbsp ghee in a pan on a low flame.
🔹 Crushed gondh should be fried until it swells and turns golden. Remove it and crush it further using a rolling pin.
Step 2: Roast Dry Fruits
🔹 In the same pan, add a little more ghee if needed.
🔹 Lightly roast almonds, walnuts, pistachios, coconut, and melon seeds until they’re aromatic and slightly golden. Remove and set aside.
Step 3: Roast Semolina (Suji)
🔹 Add semolina to the pan and roast on low heat in 1–2 tbsp ghee until it turns light golden and emits a nutty aroma.
🔹 Set aside.
Step 4: Roast Whole Wheat Flour
🔹 Now add more ghee (around 4–5 tbsp) and roast the whole wheat flour on low to medium-low heat.
🔹 Keep stirring constantly to avoid burning. The flour will darken and give off a roasted, nutty fragrance. This may take 12–15 minutes.
Step 5: Combine All Ingredients
🔹 Once the flour is well roasted, add the roasted semolina, dry fruits, edible gum, and coconut.
🔹 Mix everything thoroughly.
🔹 Turn off the heat and let the mixture cool slightly (but not completely).
Step 6: Add Cardamom and Sugar
🔹 Once the mixture is warm—not hot—add powdered sugar, cardamom powder, and nutmeg (if using).
🔹 Mix well until evenly combined.
Storage:
🔹 Let it cool completely.
🔹 Keep at room temperature in an airtight jar during storage.
🔹 In colder climates, it keeps for three to four weeks during the winter; in warmer climates, it should be refrigerated.
