* 1 cup flaxseeds (alsi)
* 1 cup whole wheat flour (atta)
* 1/2 cup desi ghee (clarified butter)
* 3/4 cup jaggery or sugar powdered (adjust to taste)
Dry Fruits (Adjust to Taste):
* 1/4 cup chopped almonds
* 1/4 cup chopped walnuts
* 2 tbsp raisins
* 2 tbsp chopped pistachios (optional)
* 2 tbsp grated dry coconut (optional)
Flavoring:
* 1 tsp cardamom powder
* A pinch of nutmeg powder (optional)
Step-by-Step Instructions for Alsi ki Pinniyan:
🔸 Step 1: Dry Roast the Flaxseeds
1. Heat a heavy pan on medium flame.
2. When the flaxseeds start to pop and give a nutty aroma, add them and dry roast for 3–4 minutes.
3. Let them cool, then grind coarsely in a blender or spice grinder. Set aside.
🔸 Step 2: Roast the Dry Fruits
1. In 1 tbsp of ghee, lightly roast chopped almonds, walnuts, and pistachios for 2–3 minutes. Remove and set aside.
🔸 Step 3: Roast the Flour
1. In the same pan, add the remaining ghee and whole wheat flour.
2. Roast on low to medium heat, stirring constantly for 10–12 minutes or until it turns golden brown and gives a toasted aroma.
🔸 Step 4: Combine All Ingredients
1. Once the flour is roasted, reduce the heat and add
* Ground flaxseeds
* Roasted dry fruits
* Grated coconut (if using)
* Cardamom and nutmeg powder
2. Stir thoroughly, then roast for a further two to three minutes.
🔸 Step 5: Add Jaggery/Sugar
1. Turn off the flame and let the mixture cool slightly (warm but not hot).
2. Mix thoroughly after adding the sugar or jaggery powder. The sweetener will melt and mix with the remaining heat.
🔸 Step 6: Shape into Pinniyan
1. While the mixture is still warm, take small portions and shape them into round laddoos using your hands.
2. If the mixture doesn’t bind, add a bit of warmer ghee.
