Step 1: Prepare the Nuts & Dates
* Heat 1 tablespoon of oil or ghee in a pan.
* Toast the raisins and nuts lightly for one to two minutes, or until golden. Take it out and put it aside.
* In the same ghee, sauté the chopped dates for one to two minutes. Set aside.
Step 2: Roast the Vermicelli
* Add remaining ghee to the pan.
* Roast the vermicelli on low-medium heat for two to three minutes, or until golden and fragrant.
Step 3: Cook the Milk
* Bring milk to a boil in a big pot.
* Add crushed cardamom and saffron (if using). Simmer for 5–7 minutes, stirring occasionally.
Step 4: Combine and Simmer
* Add roasted vermicelli to the milk. Cook for 5–8 minutes until soft.
* Add sautéed dates, nuts, and sugar. After a thorough stir, simmer for a further five to ten minutes, or until
slightly thickened.
* Add rose water just before turning off the heat.
