Ingredients Chicken Cheese Paratha
For Chicken Filling:
♦ 250g boneless chicken (boiled & shredded or minced)
♦ 1 tbsp oil
♦ 1 medium onion, finely chopped
♦ 1 green chili, finely chopped
♦ 1 tsp ginger-garlic paste
♦ 1/2 tsp cumin seeds
♦ 1/2 tsp coriander powder
♦ 1/2 tsp chili flakes
♦ 1/2 tsp garam masala
♦ 1/4 tsp turmeric powder
♦ Salt to taste
♦ 1 tbsp chopped coriander leaves
♦ Juice of 1/2 lemon
For Cheese Mix:
♦ 1 cup shredded mozzarella cheese
♦ For added richness, add half a cup of shredded cheddar cheese
♦ 1 tsp chili flakes or oregano (for flavor)
For Dough:
♦ 2 cups whole wheat flour
♦ 1/2 tsp salt
♦ 1 tbsp oil or ghee
♦ Water to knead
♦ Ghee or butter for cooking
Step-by-Step Instructions Chicken Cheese Paratha
Step 1: Prepare the Dough
1. Put the oil, salt, and wheat flour in a mixing bowl.
2. Knead into a soft dough after adding water gradually.
3. For at least 20 minutes, cover it & leave it to rest.
Step 2: Cook the Chicken Filling
1. In a pan, heat the oil. include the cumin seeds & allow them to sizzle.
2. Add onions and green chili. Sauté until soft.
3. Add ginger-garlic paste and cook for a minute until the raw smell disappears.
4. Add the shredded or minced chicken.
5. Add salt, turmeric, garam masala, chili flakes, & coriander powder.
6. Cook for 5–7 minutes on medium heat until everything is well blended and dry.
7. Finish with lemon juice and fresh coriander. Let the filling cool completely.
Step 3: Mix the Cheese
1. In a bowl, combine mozzarella and cheddar cheese.
2. Mix in chili flakes or oregano for flavor. Set aside.
Step 4: Assemble the Parathas
1. Divide dough into equal-sized balls.
2. Roll out two thin circles of dough (about 6–7 inches wide).
3. On one circle, spread 2 tbsp chicken mixture and 2–3 tbsp cheese evenly, leaving edges clear.
4. Press the corners of the second dough round to bind it after placing it on top.
5. Roll gently to flatten further without tearing.
Alternatively, make a single larger dough ball, roll it, place the filling in the center, fold the edges inward, and then roll again carefully.
Step 5: Cook the Paratha
1. Heat a tawa or skillet on medium heat.
2. Place the filled paratha and cook for 2 minutes on one side until golden spots appear.
3. After flipping and applying butter or ghee to the top, cook for a further two to three minutes.
4. Cook until golden and crispy after flipping once more and spreading extra ghee on top.
