♦ Step-by-Step Instructions for Chinese Recipe Rice
Step 1: Prepare the Ingredients
1. Cook the Chinese recipe rice in advance and let it cool. preferably overnight. Fresh rice will be too soft and sticky, so day-old rice works best.
2. If using protein, cook it ahead of time. You can stir-fry chicken in a little oil and set it aside. For vegetarian fried rice, skip this step or use more vegetables.
3. Chop the vegetables and mince the garlic. Before cooking begins, everything needs to be prepared.
Step 2: Scramble the Eggs
1. Heat 1 tablespoon of sesame oil in a large wok or frying pan over medium heat.
2. Pour in the beaten eggs and scramble until just set. Set aside the eggs from the pan.
Step 3: Sauté the Aromatics
1. In the same wok, add another tablespoon of oil. Add the minced garlic, diced onions, and carrots. Stir-fry for 1–2 minutes until fragrant.
2. Add the green beans, bell peppers, and peas. Cook for another 2 minutes until vegetables are just tender but still crisp.
Step 4: Stir-Fry the Rice
1. Move the vegetables to the wok’s side. The day-old rice should be added after a little oil has been added to the vacant area. Any clumps can be broken up using a spatula.
2. Stir-fry the rice for 3–4 minutes, making sure the rice is well-coated with the oil and starts getting slightly crispy in spots.
Step 5: Add the Seasonings
1. Pour in the soy sauce and oyster sauce (if using), followed by the Chinese five-spice powder, white pepper, and sugar. To evenly coat the rice, give it a good stir.
2. Add the scrambled eggs back to the pan and mix everything together.
Step 6: Balance the Acidity
1. Taste and adjust: if it’s too sweet, add a bit more lemon juice or tamarind paste (optional).
2. After two more minutes of cooking, turn off the heat.

♦ Unique Tips for Perfect Chinese Recipe Rice
1. Day-old rice is a must it’s dry, meaning it won’t clump together when fried and will absorb the flavors better.
2. High heat is key. Cooking on medium-high heat allows the rice to get crispy on the edges without overcooking the vegetables.
3. Don’t overdo the soy sauce. Too much can make the fried rice too salty; balance it with a small pinch of sugar and a splash of rice vinegar for a perfect flavor balance.
4. Add a smoky touch by drizzling a little smoked sesame oil at the end.
